i looooove mediterranean food, but for some reason, it took me months to get around to trying some new mediterranean recipes and putting them on the blog. a few weeks ago i found a recipe for chicken shawarma, where the creator claims that she has “cracked the homemade chicken shawarma code.” she does concede that it’s more a shawarma-style chicken (as it isn’t cooked on a rotisserie, like shawarma usually is). in any case, how could i not give it a try?
the verdict? suuuuuper flavorful and delicious! i cooked mine in the oven, and the only ingredient i omitted was the pinch of cayenne.
we made pita sandwiches with the chicken, and had lettuce, tomatoes, red onions, homemade tzatziki sauce, and homemade hummus (courtesy of Mel Nash), to go with it. we also grilled up some zucchinni and eggplant to get another serving of veggies.
for the tzatziki sauce:
- 2 cups plain Greek yogurt
- 1 cup diced seedless cucumber
- 2 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 2 tablespoons finely chopped fresh dill
- salt and pepper, to taste
combine all ingredients in a bowl, refrigerate, and serve!
for Mel’s hummus:
- 1 can garbanzo beans
- 1/4 c juice in garbanzo bean can
- 2 Tbs olive oil
- 2 Tbs tahini sauce
- 2 (or more) garlic cloves
- juice of 2 lemons (4 Tbs)
- 1/4 tsp salt
- pepper to taste
combine all ingredients in a blender/Magic Bullet and voila!
a super easy, healthy, and delicious meal! 🙂
