kevin and i looooove mexican food, so it makes sense that we also love chicken tortilla soup. we tried a recipe by Ree, aka the Pioneer Woman. we followed it to the tee and topped ours with homemade tortilla chips, red onions, avocado, and cilantro. the toppings really amped up the flavors and made the soup look so colorful and pretty! overall, we thought it was pretty good, though not amazing. we may try a different recipe in a future.
we also made some cornbread muffins (a recipe recommended to me by our dear friend Amy Jones). i’ve been making them for a few years now but thought i would still share them on the blog since they’re so delicious! the only thing i do different from the recipe is to cut back on the white sugar because i don’t like my cornbread to be too sweet.
