happy new year everyone! kevin and i are resolved to eat a little healthier this year. the past few months since being married, i’ve been giving in to his random and rather frequent cravings for pizza, ice cream, cookies, etc., but kevin has asked that this year, i say no to these cravings and steer him/us on a better path.
so this past week we made 1) tuna patties and 2) portobello mushroom steaks (not for the same meal…on different days).
Ingredients:
- 2 (7 oz) cans tuna (rinsed and drained)
- 3 eggs
- 2 Tbs lemon juice
- 1/2 cup chopped red onions
- 1 tsp dried parsley
- 1/2 tsp dried dill
- 1 tsp garlic powder
- pinch of paprika
- oats or bread crumbs to get the right texture for the patties
combine all of the ingredients in a large bowl. this recipe makes about 6 medium sized patties. you can cook them in a frying pan or bake them in the oven at 350. we opted for the latter and served them over a spinach salad.
Ingredients:
- 2 portobello mushroom caps
- 3 Tbs olive oil
- 2 Tbs balsamic vinegar
- 3 Tbs chopped onion
- 3 cloves garlic (minced)
combine the last 4 ingredients in a bowl and then pour over the mushrooms, gill side up. let the mushrooms marinate for at least an hour and then grill them for 10 minutes. we served these with parmesan fries and salad.
our review: the tuna patties were okay. they didn’t have a ton of flavor and kick. with some condiments they were fine, but alone they were lacking…the portobello mushrooms, on the other hand, were super flavorful and delicious! the balsamic vinegar was a bit strong so if you aren’t a huge fan, you may want to cut back a little bit on that ingredient.
