zoodles!

spaghetti is a staple in our home, but all those carbs all the time, can’t be good for you. i saw this brilliant idea online while looking for healthy recipes…zoodles! noodles made out of zucchini! they can substitute for your spaghetti noodles entirely OR just substitute for half of your noodles so that you’re still getting some regular noodles, but also a good serving of vegetables with every bite!

i used a mandoline with the julienne setting to slice the zucchini into beautiful noodle sized pieces. you can also use a device called a spiral slicer aka spiralizer OR a julienne peeler (see below!) i reeeeeally want to get one!

after slicing the zucchini i sauteed it in a pan with a little bit of olive oil and seasoned it with some pepper and garlic salt until the zucchini juuuuust started to wilt. no one likes mushy, overcooked zucchini. this is great with meatballs or plain marinara sauce or any other sauce that you like. i made a clam & sausage sauce, like the one we used when we made clam & sausage pizza. yummmm!
