last week we made taco rice and we made 2 pounds of it! since we have quite a bit leftover, i decided that it was time to try and make taco zucchini boats!
all i did was cut the zucchini in half (long ways) and scoop out the center of the zuchinni halves. some recipes suggest dropping the zucchini into a pot of boiling water for 1 minute before stuffing them, while other recipes don’t. i decided not to.
after preheating the oven to 400, stuffing the zucchini with the taco meat, and topping each boat with cheese, i placed them in a baking dish and baked them for 20-25 minutes. they were yum yum YUMMY!
