grilled tofu tacos

we got back from our vacation a week ago but the fun has only continued! we enjoyed a jam packed weekend celebrating the 4th of July with both our families and friends.

with all the heat, catching up on laundry, and adjusting back to work last week, the theme for our dinners was light and easy. since we were making tacos with pork bulgogi, i wanted a vegetarian option of grilled tofu too!

tofu tacos

(recipe adapted from Love and Lemons)

Ingredients:

  • 1 block of extra firm tofu
  • 3 tablespoons olive oil
  • juice of 1 lemon
  • 1 tsp garlic powder
  • 1/2 tsp sugar
  • 1/2 tsp chili powder
  • 1/4 teaspoon paprika
  • 1/4 tsp cumin
  • salt, pepper

Directions:

1) Sprinkle tofu slices with a generous amount of salt, place it between 2 towels and put something heavy on it. Let it sit for 20-30 min or so to drain out some of the moisture.

2) Mix the marinade together. After pressing the tofu, cut into 8 pieces and place it in a dish that is large enough for the tofu to fit in one layer. Pour on marinade, flip tofu to coat both sides. Marinate for 30 minutes, flipping the tofu frequently.

3) Grill the tofu for 1-2 minutes per side. Remove from heat, and pour on the remaining marinade for extra flavor.

4) Enjoy!

we had grilled onions & bell peppers, guacamole, fresh salsa, and sour cream as fixings for the tacos. the grilled tofu was delicious! i probably went a little overboard with the chili powder…it was pretty spicy. i’ll probably cut back on the spices next time. the tofu was quite protein-acious/filling and tasted great over salad the next day. yum!
