coconut cilantro grilled chicken

wow, so much has happened since i last posted back in july! we moved, started med school, went to 3 weddings, and celebrated our 1 year anniversary! i originally wasn’t sure whether this blog would live on in med school, but i’ve found that cooking has actually been a nice study break for me. i can’t promise weekly posts, but maybe once every few weeks?

Ingredients:

  • 2 lbs chicken breasts
  • 1 cup coconut cream
  • 1/2 red onion, medium
  • juice of 1 lime
  • handful cilantro
  • jalapeño to taste (i used 1/2 of one)
  • salt & pepper to taste

Directions:

  1. In a food processor/magic bullet, combine all ingredients except chicken and process until a smooth mixture is formed.
  2. Wash chicken under cold running water, pat dry with paper towels and pierce randomly with a small knife. Add to a medium bowl or any container that can be covered. Pour marinade over chicken, mix with your hands to coat the meat evenly, cover and refrigerate for at least 4 hours or overnight.
  3. Grill the chicken until just cooked through. Enjoy!

this chicken was soooooo good (and suuuper easy to make)! we ate it with rice and some grilled vegetables. i also heated up some of the extra sauce and poured it over the rice. it was pretty much like thai curry. yum!
