wow, so much has happened since i last posted back in july! we moved, started med school, went to 3 weddings, and celebrated our 1 year anniversary! i originally wasn’t sure whether this blog would live on in med school, but i’ve found that cooking has actually been a nice study break for me. i can’t promise weekly posts, but maybe once every few weeks?

Ingredients:
- 2 lbs chicken breasts
- 1 cup coconut cream
- 1/2 red onion, medium
- juice of 1 lime
- handful cilantro
- jalapeño to taste (i used 1/2 of one)
- salt & pepper to taste
Directions:
- In a food processor/magic bullet, combine all ingredients except chicken and process until a smooth mixture is formed.
- Wash chicken under cold running water, pat dry with paper towels and pierce randomly with a small knife. Add to a medium bowl or any container that can be covered. Pour marinade over chicken, mix with your hands to coat the meat evenly, cover and refrigerate for at least 4 hours or overnight.
- Grill the chicken until just cooked through. Enjoy!
this chicken was soooooo good (and suuuper easy to make)! we ate it with rice and some grilled vegetables. i also heated up some of the extra sauce and poured it over the rice. it was pretty much like thai curry. yum!
