cauliflower steaks

we are coming up on our first set of exams so things have been intense, but my love for good food and cooking keeps me sane and happy. i’ve been in a cauliflower phase these days…i think we’ve eaten cauliflower at least once a week, for the past 3 weeks!

Ingredients:

  • 1 large head cauliflower
  • 1 Tbs olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • salt & pepper
  • chopped cilantro

Directions:

1) Preheat the oven to 400°F.

2) Remove the leaves and trim the stem end of the cauliflower, leaving the core intact. Using a large knife, cut the cauliflower from top to base into 1 inch-thick “steaks.”

3) Whisk together the olive oil, ginger, cumin, turmeric, salt & pepper. Brush or spoon the mixture on both sides of the cauliflower steaks.

4) Roast in the oven until tender, about 15 minutes. Garnish with cilantro (optional).

5) Enjoy!

this dish was so easy and delicious! it took less than 20 minutes to throw together and kevin and i love indian food so the flavors were great! we ate the cauliflower with some leftovers from the weekend, more as a side vegetable dish, but i could easily see it as the star/main of a meal.
