steel-cut oatmeal muesli

i got reeeeeally excited when i stumbled across this recipe for muesli (cold, no-cook oatmeal) using steel cut oats (traditionally, regular rolled oats are used for muesli)!!! while i love steel cut oatmeal, the time it takes to cook often discourages me from making it. no-cook steel-cut oatmeal muesli allows me to enjoy the amazing chewy texture of steel cut oats, save time, AND stay cool in this heat!

i poured 1/2 a cup of steel cut oats into a bowl, then mixed them with 1 cup of soy milk. i refrigerated the oats overnight and ate them in the morning with a banana. delish!!!

the original recipe called for some honey, cinnamon, raisins, and grated citrus zest before refrigerating.  it also recommended toppings like grated apple or chopped peaches, blueberries, and almonds after refrigerating. it doesn’t really matter what you add….anything will taste good!

starting a new test cycle tomorrow! whoohoo!
